A long, flexible stainless steel palette knife with a stepped (slanted) offset blade and a moulded plastic handle. Use it to spread and smooth buttercream, ganache and jam across cake tops and sides, and to lift biscuits and slices off trays — the offset keeps your knuckles clear of the cake. Suits bakery and pastry sections as well as home bakers doing regular icing work.
