A slanted (offset) palette knife with a flexible blade and a riveted wooden handle, for spreading buttercream and ganache, smoothing cake tops and lifting biscuits or slices off trays. The step in the blade keeps your knuckles clear of the cake, which makes it easier to get a clean finish on the sides. Suits bakery and pastry sections as well as home bakers; blade is about 20 cm long, going by the 8" in the name.
