A cast aluminium athili (nabili) — a deep, wide-mouthed bowl with a ribbed inner face and a flat-ish base, made for kneading rotti and thosai dough, mixing flour, whisking batters and holding washed rice or vegetables. The ridged interior gives dough something to work against, and the heavy aluminium body takes daily handling in a busy kitchen. Suits hotel and restaurant prep tables, caterers and rotti stalls as much as a home kitchen; No 00 is the smallest in the size run, so check the larger numbers if you mix in bulk.
