A thick-walled cast aluminium thachchi (deep frying kadai) with two riveted loop handles and a flat-seated base for stove or firewood use. The heavy body holds heat well for deep-frying, tempering, frying fish and cutlets, and cooking large batches of curry or sweets. Built for busy hotel and caterer kitchens, though home cooks who fry in bulk will get years out of it.
