A heavy cast aluminium athili — a deep, round pan with two cast lug handles, made for frying, tempering and slow simmering over gas or firewood. The thick walls hold heat well and stand up to daily commercial use, so it suits busy kitchens as much as home cooks making curries, kavum or sweets.
