A Tramontina chef knife from Brazil with a stainless steel blade of about 8 inches and a moulded blue polypropylene handle, NSF marked for commercial kitchen use. The broad, tapered blade handles everyday slicing, chopping and portioning of vegetables, meat and fish, and the coloured handle suits kitchens that separate knives by task to avoid cross-contamination. Built for hotel, restaurant and catering lines, but equally at home on a serious home cook's board.
