A cast brass kokis mould in a butterfly pattern, fitted to a long steel shank with a turned wooden handle that stays cool while you work over hot oil. You heat the mould in the oil, dip it in the rice-flour and coconut milk batter, then lower it back into the pan so the crisp kokis releases off the pattern. Suits home cooks making kokis for Avurudu, and caterers or hotel kitchens doing sweetmeat platters in volume.
