A cast aluminium kokis mould in the classic round cartwheel pattern, fixed to a long steel shank with a turned wooden handle that keeps your hand clear of hot oil. You heat the mould in the oil, dip it in kokis batter and lower it back in until the crisp shell releases on its own. Suits home cooks making kokis for Avurudu and Christmas tables, and caterers or hotel kitchens turning out sweetmeat platters in volume.
