A solid brass kokis mould in a six-petal flower (idda) pattern, fixed to a long steel shank with a turned wooden handle so your hand stays clear of the hot oil. You heat the mould in the oil, dip it in the rice flour and coconut milk batter, then lower it back to fry until the kokis releases crisp and golden. Suits home cooks making Avurudu and Christmas sweets, and caterers or hotel kitchens turning out Sri Lankan sweetmeat platters in volume.
